But boy does it taste delicious! Ingredients: 1 cup peanuts, roasted (or use ready-salted peanuts, in which case dont add any more salt) 2 firm but ripe tomatoes, chopped finely 1/2 cup cucumber, chopped finely 1 small sweet onion, chopped finely 1-2 fresh green chillies, minced finely (add more or less according to taste) 1/2 cup fresh cilantro, finely chopped 2 tsp lemon juice Salt to taste Method: Mix together all the items, except the peanuts. Chill in the refrigerator for a few hours if not serving immediately. This also allows the flavours to mix and mellow. Just before serving, add the peanuts and toss lightly until well mixed.
