Tomato-egg breakfast thing

I made this up a few weeks ago. It seems familiar so maybe once upon a time I

followed a similar recipe. The kids (10 & 6) loved it,_._,___

 

1 TB oil

2 onions, chopped

several cloves minced fresh garlic

chopped hot peppers to taste (I used 1 jalapeno & it was just warm enough to

not bother the kids)

2 cans diced tomatoes

pinch sugar

6-8 eggs

chili powder (I used ancho)

 

sautee onions, add garlic & peppers. Add tomatoes. Stir in sugar. Simmer

until thick & reduced. Crack eggs into a small bowl one at a time & gently set

eggs on top of reduced tomato mixture. Sprinkle w/chili powder. Cover & cook

on low until eggs are set/cooked to desired doneness.

Delicious breakfast 'thing', Beth! Thanks for the recipe :) I've popped it into

the Files under

European and N. American Mains since I think it would make a great brunch/lunch

dish

and also a light supper dish with the appropriate salads or whatever.
