Guest guest Posted February 12, 2007 Report Share Posted February 12, 2007 JONATHAN'S SIMPLE BUT DELICIOUS BLACK BEAN SOUP Saute 1 small onion in olive oil. Add in 1 sliced carrot and 3-4 cloves crushed garlic for last 15 minutes. Add in 2 small cans of black beans (or 1 large one) including juice. Add in half a large can of tomatoes. Add in oregano. Add in salt. Secret ingredient: Add in 1-3 teaspoons of a can of chipotle with adobo sauce. (Not too much, it's hot and domineering.) Simmer for 30-60 minutes till it's the desired thickness.
