POLLO INKA'S AJI SAUCE and others

I have to share these recipes with you all. I ran across the name of

the recipe in a forum where someone was looking for the recipe.. so I

did some searching and found these. This first one is from Pollo

Inka - a Peruvian restaurant someplace in California... it came

highly recommended.

The sauce can be eaten on sliced crusty bread, baguettes etc. It

sounds a bit odd, but it is wonderful! Very easy to make, and I can't

keep enough made and I have to make it again. This is a very

forgiving recipe as you can add more of less of any ingredient, as

you like.

 

POLLO INKA'S AJI SAUCE

 

Green lettuce (blend 7 or 8 leaves into blender)

3 tablespoons of Veg. mayo

1/2 tablespoon of lime juice

cilantro 1/4 bundle (cut stems off)

4 Serrano peppers

1/8 teaspoon of salt

 

Blend all together in a food processor or blender

Adjust ingredients according to taste, spiciness and quantity.

Another Aji sauce

 

1/4 head of lettuce, torn into pieces (iceberg is fine, romaine is

better)

3 jalapeno chiles, seeds and veins removed

1/4 cup mayonnaise

5 green onions

1/2 bunch of cilantro leaves (try to avoid the stems)

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

 

Put all ingredients into a blender or food processor and process

until smooth. It should come out bright green in color.

Aji de Peru

 

Leaves of ½ bunch cilantro

1 clove garlic

1 celery stalk

Juice of ½ lime

½ tsp salt

1 tsp olive oil

¼ cup water

6 jalapeno peppers or 2 jalapenos and 3 habaneros (to make less

spicy, remove seeds)

 

In blender, add cilantro, garlic, celery and peppers and blend at low

speed until mixed. Add water and blend again. Add oil, lime and salt

and blend again. Makes 1 cup
