Guest guest Posted February 25, 2007 Report Share Posted February 25, 2007 * Exported from MasterCook * Polenta Primavera Recipe By :Created by Nestle Serving Size : 8 Preparation Time :0:00 Categories : Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 2/3 cup Albers yellow corn meal 1 cup shredded fontina cheese - (4 oz) = (or mozzarella cheese) 1/2 cup heavy whipping cream 1/4 cup grated Parmesan cheese - (1 oz) 1/2 teaspoon salt 1/4 teaspoon freshly-ground black pepper 1 can primavera pasta-ready chunky tomatoes - (14 oz) -- undrained, warmed Grease 9-inch pie plate. Bring water to a boil in medium saucepan. Slowly add cornmeal over medium heat, stirring constantly, for 2 to 3 minutes or until slightly thick. Stir in fontina cheese, cream, Parmesan cheese, salt and pepper; cook, stirring constantly, for additional 2 minutes or until very thick. Spread into prepared pie plate; cool for 1 hour or until firm. Cut into wedges; serve topped with tomatoes and juice. This recipe yields 8 servings. I shall be looking them over (saving 'em to try myself) and they will go into the Files later today when I have a moment. But I don't quite know what I want until I know it exists, if you know what I mean *duh* LOL But just polenta, which is great, is a bit much for two unless half of it can be turned into something else - so something like your polenta-stuffed peppers is a great idea. Actually, they all look good and I shall let you know how they go as we try them. But if you collect recipes, do please let us know any especially good ones that you have enjoyed!
