I don't know that his book will be for a particular disease. He just mentioned to me how important raw is than cooked and that he didn't see why a diabetic couldn't everything, maybe less dates, depending what the dish is. The Raw Food Gourmet by Nomi Shannon. Here's the wonderful beet dish from this book: ORANGE BEETS 3 c grated beets Juice & grated rind of 1 orange 1 tbsp maple syrup 1 tbsp extra virgin olive oil pinch sea salt Here is aquick way to dress up beets for a side dish. It only takes a few minutes to make this grated dish, and the benefits of beets are worth farm more than time taken to prepare them. This recipe is fun to serve in orange cups. In a small bowl combine the beets, jujice, rind, maple syrup, oil and salt. Toss together. Let the flavors blend for a few minutes before serving. Serves 6. My comments: I did not use salt. This tastes soooo refreshing. Re diabetes..we are not part of a group. I bought Dr. Neal Barnard's book on Reversing Diabetes without medication. I called the phone number on his website for some information and am so glad I did. That led me to discover pcrm.org. They have wonderful information there, plus a group to ask questions within...one of the staff from pcrm helps you with questions about foods, packaged foods, diet, etc. From there this morning I discovered godairyfree.com and from there a few vegan cookbooks that should help in correcting my husband's diabetic numbers. I may write to Juliano and tell him as he's writing his book, keep in mind we don't like cookbooks where you have to jump from page to page to incorporate this recipe or that recipe into another recipe.
