I started to get some things prepared in advance for dinner...decided I'd cook the butternut squash. On curiousity I checkd my Raw Uncook Book and found a butternut squash soup. It is delicious. Butternut Squash Soup 3 c butternut squash, peeled, seeded and chopped 1 mango, cubed 2 tsp curry 4 c orange juice 1/2 c honey or dates In a blender, combine the butternut squash, mango, curry, orange juice and honey or dates and blend until creamy. Garnish with plantain or banan slices, mint, jalapeno, and mango. serve immediately after blending. Here's what I did....I only had just barely over 2 c of squash, so then I used 1 c of frozen mango cubes, 1 tsp curry, 2 c orange Recharge juice, as I didn't have orange juice, and put in about 4 dates.
