I am 37, from Adams, Massachussets (the western side of the state). I

have two beautiful daughters who live with their dads.

Unfortunately the apartment complex that I live in, we aren't allowed

dogs or cats...sigh.

I love my digital camera...I rarely leave home without it, afraid I

might miss something!! I take mostly nature shots. I dabble in art

(oil and chalk pastels, clay, and I am in love with this corel painter

program I have..although I haven't learned all that it can do).

I love authentic people..Hate the one's who put on heirs and masks to

try to please you..they always let you down.

I have been thinking about going vegetarian for a few years now... I

have mostly given up red meat, I have had probably 3 hamburgers this

year...Although I like veggie burgers much better. I do use milk in my

cereal...haven't switched over yet...not sure which one to try.

I live alone, and find that cooking for myself isn't fun. So I usually

just snack, but I would love to find dishes that I can either make for

one, or can also freeze for later.

So that is a bit about me... Glad to be here. Looking forward to

meeting you all. And learning new stuff....

Hi Rana,

Welcome. Have you looked in the files yet? I'm sure you'll find a lot of

great recipes to try. Pretty soon you won't miss those hamburgers at all.

It is hard to cook for one or two. I usually make a lot of soup in my

crockpot on Sunday, and then we're eating it all week long. But the plus

in that is, I don't have to worry about not having time to cook when I

get home from work.

Have you tried vanilla flavored soy milk? I really love it in cereal and

in tea.

Are any of your photos on the web? You live in a really pretty part of

the country, so you must have some great nature shots.

Welcome, Rana! Nice to have you join us. And how very nice that you have

finally decided to go Vegetarian after some years of thinking of it. It's not

on a whim, so you'll probably enjoy it and find it as rewarding a lifestyle/

eating pattern (whichever you think if) as we do. I played around with the

idea too, for some years - ages ago now. Just wish I'd done it sooner :)

 

We don't mind that you're not actually veggie yet - just remember that

on this group we ask for no discussions of eating me*t (including any

'animal' that has a face or had a mother, as they say, including those that

fly, swim, crawl, hop, or sit on or under rocks (did I leave any out? LOL)

likewise, of course.

 

And speaking of recipes, you'll find lots to please you here!!! There are loads

in our Files on the homepage, and you can also do a search of the archives

by typing in the recipe you're looking for into the search box on the Messages

page. If you have problems, just let us know - okay?

Hi Rana,

 

I'm new to the group, too. I'm in a similar living situation to yours. I

often cook just for myself. I had a large family and at first I found it

difficult to switch to cooking good meals for just myself. And sometimes it

makes me sad to cook an elaborate meal for just myself, especially every night.

I started cooking my usual large meals a couple of times a week then freezing

them in individual containers. That way I have a variety of nutritious meals

in small portions each week. If you'd like you can write to me off list and

I'll elaborate.

Hi again, Rana :)

 

Hilary's post has reminded me: there's a cookbook out by Leah Leneman called

_Vegan

Cooking For One_ (does anyone here know it?). I haven't seen it myself, but a

newbie on

one of my other groups just posted that she has JUST bought it since she is the

only

wannabee veggie in the household. I've asked her about it, so when I know more I

can

report. What I can say is that I have another of Leneman's books - her _The Tofu

Cookbook_ and have found it very good indeed, so I would have high hopes for

this new

one.

 

Btw, it's ok here to discuss techniques of freezing recipes, etc., with the

whole group if

you and Hilary want. I think there'd be input from some of the others too, and

certainly

even lurkers might benefit from various ideas and hints. There's just my dh and

self in this

household (well, the furkids would dispute that, but they don't cook) so I

either halve

recipes for four or I freeze half of the recipe. I make soups and stews in

large-ish

quantities, leave enough out for twice and seal the rest into freezer packs to

serve two. (It

does help, of course, that we have a two-door fridge with one-half of it

freezer.)

 

Anyway, more on this later . . .

I do apologize to my mentioning the unmentionables...I did read the

mailing..and when I was typing away, it slipped my mind as I was

trying to explain how I was coming to this decision....again, I

apoligize if I offended any one.

I spent some time this morning going through the files...found many

recipies that seem very pleasing, and not too difficult to cut down

to size!!! Very excited to try some out. Thanks for your help!!

I will buy/try the vanilla soy milk on my next trip to the grocery

store, thanks for the recommendation. Question...Do bean dishes

freeze well???

I just asked another about whether bean dishes freeze well... I can

see now from your message that they must...since you make soups and

stews...

That would be great if you could find out about that cookbook... I

will see if they have it in my area as well... take a peek at it.

Oh no, no need to apologize. You did just right :) You were only

explaining. My comment was a standard one that I throw in whenever

someone new comes aboard and says that they're still eating meat.

 

So glad you have looked through our Files. We have some very talented

and adventurous cooks on this group, so I don't think you will be disappointed.
