Thanks to all who responded to the Roll Call of last Monday - and especial thanks to those who sent recipes - they will be happily added to the Files over the weekend. (Any more?) It's lovely to hear from some old members/friends who have been with us since the beginning of the group in May 2004 - and I do understand that many of you are very busy, so it is even more appreciated. It has been very time consuming trying to get all the wheels in motion. My name is Carol and I live in Millstone Twp., NJ with my husband Jay of 17 years and our two beautiful boys, Joe 16 and John 9, who are kicking and screaming about our decision to transition to a vegetarian lifestyle but we did not expect anything less from them...lol! My husband is down to chicken once every two weeks, sometimes more often depends on his workd schedule and I am practically meat-free. I was never really a big meat eater to begin with so it has been that difficult for me. I don't have any recipes to share yet but as soon as I do I will be sure to post them. My name is Dan Gannon and I live in Portland, Oregon. My wife and I really enjoy various cuisines, such as Thai, Indian, Mayan/Yucatecan, and Italian. We love spicy and flavorful foods - not necessarily overpowering, but at least detectable. I'm thinking of starting a restaurant of some sort, someday. Tenor (Vancouver Chamber Choir) and voice teacher about to embark on a masters program in vocal pedagogy after 35 years out of school, I'm wondering if the grey matter will still work! My partner and I became vegan around 8 years ago after a gradual " evolution " that took us about 12 years. We eat a very eclectic variety of foods from around the world. I love to cook and am always experimenting with reproducing restaurant meals or veganizing tantalizing recipes. When I'm not cooking, singing or teaching, I can usually be found in my community garden plots. Unlike many, I am vegetarian for medical reasons..cannot digest meat..so I look for spicy vegetarian meals to balance off the mostly bland recipes out there. I've been delving into Mediterranean and Indian cooking lately, and some of the questions that have been going back and forth here have given me some good ideas. So...here's a question... What's your favorite hummous recipe? I've gathered a couple of them, but would love to have more to try. Substitutes for chick peas? Other favorite flavorings to add? After all, I need to use up this huge jar of tahini from my local market. The dough will be thick like cookie dough, so stop if your beaters get bogged down. Knead in the raisins and walnuts. Press the dough into the prepared pan, using a spatula or slightly moistened fingers to press the dough into place and smooth out the top. Bake for 35 to 38 minutes, until golden brown on top. Let the cake rest in the pan for several minutes, then remove from the pan and cool on a wire rack. Now, you can eat the cake just like this, or dust it lightly with powdered sugar, but if you want to be really Greek about it you'll make a sugar syrup: Boil the sugar and water together in a small saucepan for about 10 minutes to form a slightly thick sugar syrup.
