Thanks to all who responded to the Roll Call of last Monday - and especial

thanks to those

who sent recipes - they will be happily added to the Files over the weekend.

(Any more?)

It's lovely to hear from some old members/friends who have been with us since

the

beginning of the group in May 2004 - and I do understand that many of you are

very busy,

so it is even more appreciated. I shall be answering your comments in the next

couple of

days. HOWEVER . . .

Sorry I haven't been on much I am a scrapbook supply shop owner and I

am in the process of planning a big event for National Scrapbooking

Day (May 5th) - the proceeds are going to be donated to the Troops

overseas. It has been very time consuming trying to get all the

wheels in motion.

 

My name is Carol and I live in Millstone Twp., NJ with my husband Jay

of 17 years and our two beautiful boys, Joe 16 and John 9, who are

kicking and screaming about our decision to transition to a

vegetarian lifestyle but we did not expect anything less from

them...lol! My husband is down to chicken once every two weeks,

sometimes more often depends on his workd schedule and I am

practically meat-free. I was never really a big meat eater to begin

with so it has been that difficult for me.

 

I don't have any recipes to share yet but as soon as I do I will be

sure to post them.

Hi, I'm here! I read the messages here sometimes, though to be honest, my time

is stretched pretty thin, these days.

 

My name is Dan Gannon and I live in Portland, Oregon. My wife and I really

enjoy various cuisines, such as Thai, Indian, Mayan/Yucatecan, and Italian. We

love spicy and flavorful foods - not necessarily overpowering, but at least

detectable.

 

I'm thinking of starting a restaurant of some sort, someday. Not sure where,

or what kind of restaurant, yet.

Hello, my name is Lizzy and I am still here. I live in New

Westminster BC Canada (near Vancouver) with my dog Simon and numerous

other small pets. I have been employed by the human rights

organization, Amnesty International, for the past 15 years, but I am

considering retirement soon. In my spare time, I run a small hobby

rattery, and volunteer with the Small Animal Rescue of BC.

 

I have been a vegetarian for almost 20 years and very much enjoy

spicey foods, however, I am not much of a cook, hence I have never

been much of a contributer to this group. My specialties are Amy's

soups and frozen entrees, and more recently I have discovered Seeds of

Time frozen entrees, my favorites being Ginger Stir Fry noodles and

Spicey Thai Peanut Noodles. I joined this group in case I ever got

inspired to cook something, and perhaps I actually will some day,

especailly after I retire!

Craig here in Burnaby BC. Tenor (Vancouver Chamber Choir) and voice teacher

about to embark on a masters program in vocal pedagogy after 35 years out of

school, I'm wondering if the grey matter will still work!

 

My partner and I became vegan around 8 years ago after a gradual " evolution "

that took us about 12 years. We eat a very eclectic variety of foods from around

the world. I love to cook and am always experimenting with reproducing

restaurant meals or veganizing tantalizing recipes. When I'm not cooking,

singing or teaching, I can usually be found in my community garden plots.

 

Tea (black, green or rooibos) is my drink of choice, although a good hearty beer

goes down well with many spicy foods;-)

Hi,

 

Yes I am here primarily as a lurker and reader. Unlike many, I am vegetarian

for medical

reasons..cannot digest meat..so I look for spicy vegetarian meals to balance off

the mostly

bland recipes out there. Otherwise, I am employed, mom of two sons and my

hobbies are

crochet and karate.

Hi!

 

About myself - I am an Indian (yes, the land of spices and muslin), currently on

assignment in Bangladesh, and we (me and my wife and son) eay purely vegetarian

food - mainly rice based. Would love to hear from the rest of the group.

 

In response to the query - I just love Mango milkshake - ripe alphonso mangoes

blended into a thick shake - mmmmm.

Have been ( and still am ) no-mail for a while on all groups thanks to 'puter

trouble!

re-arranging + rebuilding furniture, planting veggies and pulling weeds, pulling

Love vegetarian chili. Publix has their own brand of

soy meat analogs that do very nicely in chili/stew

type dishes.

Hello,

 

Can't say I'm very active in the discussions, but I sure do like seeing the

yummy recipes that come our way. I've been delving into Mediterranean and Indian

cooking lately, and some of the questions that have been going back and forth

here have given me some good ideas.

 

So...here's a question...

 

What's your favorite hummous recipe? I've gathered a couple of them, but would

love to have more to try. Substitutes for chick peas? Other favorite flavorings

to add?

 

After all, I need to use up this huge jar of tahini from my local market.

¾ cup orange juice

½ cup sugar

¾ cup raisins

1/3 cup chopped walnuts

 

for the syrup:

½ cup sugar

1/3 cup water

 

Preheat oven to 350º. Spray an 8-inch round springform pan (or cake

pan) with nonstick spray and dust with flour. Set aside.

 

Sift together the flour, baking powder, salt, and cinnamon and set

aside. Place the tahini in a large mixing bowl and slowly drizzle in

the orange juice while beating with an electric beater. Add the sugar

and beat well for several minutes, until smooth and lighter in color.

 

Add the dry ingredients and mix well. The dough will be thick like

cookie dough, so stop if your beaters get bogged down. Knead in the

raisins and walnuts.

 

Press the dough into the prepared pan, using a spatula or slightly

moistened fingers to press the dough into place and smooth out the

top.

 

Bake for 35 to 38 minutes, until golden brown on top. Let the cake

rest in the pan for several minutes, then remove from the pan and cool

on a wire rack.

 

Now, you can eat the cake just like this, or dust it lightly with

powdered sugar, but if you want to be really Greek about it you'll

make a sugar syrup:

 

Boil the sugar and water together in a small saucepan for about 10

minutes to form a slightly thick sugar syrup. Drizzle the syrup

liberally over the top of the cake and brush on the sides.

 

Cut into wedges and enjoy!

I have tried so many different hummos recipes, but this, so far, is my favorite.

Amount Measure Ingredient -- Preparation Method

2 tablespoons chopped onion

1 garlic clove
