Guest guest Posted April 17, 2007 Report Share Posted April 17, 2007 Just replace the dairy with Tofutti brand of Sour Cream and Cream cheese. Also there are several vegan cheeses on the market. Other than that, you could just leave it out, if it isn't a cruical ingredient. Veganaise is a great substitute for mayo too. Unflavored soymilk could be used in recipes that call for milk. Help....plz.... OK, but you're not alone. And while there may be few ovoLACTO- or LACTO-vegetarian recipes that do exclude dairy, there are huge numbers of dietary vegan recipes which do so. Otherwise, you can almost always substitute non-dairy alternatives for dairy. There are excellent fake milks, creams, sour creams, and cheeses on the market. Some fake cheeses contain casein, which is from milk (and therefore not eaten by dietary vegans), but casein, I understand, has no lactose so would not cause you a problem. In our Files, many recipes are vegan (and many of those are actually marked 'vegan', although not all) and they will be free of dairy. If you find a recipe which you would like to change from dairy to non-dairy and can't figure out how to do it, please feel free to ask us Happy to help. In addition to Pat's great advice, remember that a lot of recipes you can just leave the dairy out. It will taste different, but you get used to that after a while. A little experimentation and thinking a recipe through will help you figure out whether something needs the dairy or whether it's a " spice " to the dish. For example, I find a lot of great casseroles (I'm big on one-dish meals) that are topped with cheese and I just don't put the cheese on or I top it with tomato slices if the cheese was partly to " protect " the ingredients under it while it was baking. But mostly I look for vegan recipes, like Pat suggested. I " add back " anything I'm okay with that's not vegan, like honey. Likewise, you could " add back " eggs if you have no problem with them. I’m not sure where you live so I don’t know which Amazon site you might be interested in checking for the book. To be honest with you. I don't miss it that much. I do use rice milk for cereal and to drink periodically (also oat milk) but other than that -- I really don't miss it at all.
