I don't eat poultry or red meat, but I do eat fish, but I don't eat soy/tofu, dairy or refined sugar. I'm trying to wean myself away from eggs, but for now, I eat those. There should be no problems in finding lots of recipes which will suit your wish to be free of dairy and eggs - look for vegan recipes here. As for the f*sh, well, eating that makes you a pescatarian. There are plenty of recipes without soy, but they are not put into a special category or marked in any special way except, perhaps, in the name of the recipe. Just search around and see what you can find. You can often substitute seitan for tofu and substitute rice milk or almond milk or oat milk for soymilk.
