Guest guest
Chris - pomegranate molasses has a very distinct sweet/tart flavor. I've purchased it at gourmet food stores in Paris, as well as ethnic groceries outside the Peripherique. There are all sorts of middle eastern/ethnic (arabic, greek, african, italian, spanish) neighborhood groceries in France; anyone of them would carry pomegranate molasses. An alternative name would be grenadine; you can find that at wine and liquor stores. There are a number of reputable ethnic groceries on the internet. Try: www.kalustyans.com www.thespicehouse.com Or make your own: put a pint of pomegranate juice (2 cups)in a small pot with 1/8 to 1/4 cup fresh lemon juice (to taste; how tart do you want it?) and 1/4 cup brown sugar; cook at medium heat until sugar dissolves. Lower the heat to a simmer and reduce liquid to a syrupy molasses consistency. If you want a more tart molasses, do not add brown sugar. Yields about 1 cup to 1 1/4 cup. I hope that provides you with some alternatives. Chupa Babi C259s wrote:Pomegranate molasses is not availbale in France. Guest guest
Interesting to hear that it is available in Paris. A bit too far away from the rural south of France though. If I decide to try the recipe I could try to make some from your molasses recipe. Though I suspect that I will simply decide to give it all a miss.
