Best, Pat (Group Owner) ------------ Hi Marion, I am a cook who went veggie about 2 years ago and there are so many things to do with your food - it is so much more interesting..... A great idea that I tried just last night was a Thai green curry using Tempah (it's fermented sprouts - and it tastes great and is very versatile) I make an easy curry 1 14 0z tin of coconut milk 3tbsp sugar 1/4 cup of 'fish sauce' substitute 1 tbsp of vegetarian green curry paste [some contain fish, so read the label] mix together in a pot add 1 pkg of tempah cut into small cubes - as it expands a bit upon cooking- heat to a simmer and continue for 15 minutes and then add 4 or 5 little ball shaped asian eggplant and 8 lime (kaffir) leaves and cook for an additional 5 minutes by this time the eggplant should be soft but still firm then add a 1/4 cup of Thai basil leave right before serving. I serve this over rice. This is worthy of guests a great crowd pleaser even for non-veggies You can find tempah in the freezer section of any health food store. It is so versatile - details are on the back of the package. Please note that you can buy cocnut milk 'fish sauce' substitute [Moderator's note: sometimes called Vegetarian Fish Sauce] vegetarian green curry paste [Moderator's note: read label to be sure no fish ingredients] asian eggplant kaffir leaves thai basil leaves at one store - a Thai grocer - don't be shy they will be more than happy to help you with the ingredients - it is well worth the trip becasue once you have these ingredients you will be making this often - restaurant taste in your own home! Oh, if ONLY I could get vegetarian fish sauce substitute here in Holland. If I had known when I left Australia that it wasn't available here I would have organised a pipeline!!!!
