Spread coriander, cumin and fenugreek seeds on a baking sheet. Bake for about 3 minutes or until fragrant. Combine with whole cloves, peppercorns, mace, nutmeg and cinnamon. Grind in a spice grinder, clean coffee grinder, or mortar and pestle until very fine. Store in an airtight container. Use as a spice mix for soups, stews, or other dishes.
