Guest guest Posted July 13, 2007 Report Share Posted July 13, 2007 @@@@@ Spicy Fruit Chutney - 2 pts 1/4 cup dried apricots, finely chopped 1/2 cup dark brown sugar 1/2 cup golden raisins 1 cup water 3 cups fresh cranberries 1 Granny Smith apple - peeled, cored and chopped 1 teaspoon grated lemon zest 1/4 cup fresh lemon juice 1/4 cup chopped crystallized ginger 1/2 teaspoon red pepper flakes In a saucepan, combine apricots, dark brown sugar, golden raisins and water. Bring to a boil. Reduce heat and simmer; stir while simmering for 5 minutes. Stir in cranberries, apple and lemon zest; simmer for 10 more minutes. Stir lemon juice, ginger and pepper flakes into the mixture before removing from heat. Serve chilled or at room temperature. Keeps well in refrigerator.
