Guest guest Posted July 20, 2007 Report Share Posted July 20, 2007 Here is a simple rice dish that I am sure that most have tried but I just tried it last night for dinner and everyone loved it. Here goes... 1 Cup of Jasmine Rice 2 Cups water 1/2 tbsp Curry powder 1/2 cup Lite coconut milk Salt/Pepper (to taste) 1. Place water, coconut milk, and curry powder into a sauce pot (put flame on high). Bring to a boil. 2. Place rice in the boiling water and stir. Turn down flame to a medium to low simmer. Place lid on. 3. Stir every 5-7 minutes or so (you dont want the rice to stick to the pan. 4. Cook for about 15-20 min with the lid on. *When rice is tender take the pot of the stove and stir in salt and pepper to taste. If there is a little more heat *spicy* than you like stir in a bit more of the coconut milk to balance the flavors. My 2 year old loved this dish. My hubby and her ate baked chicken with it and I ate well you know good old veggies sweet peas, white corn. I think this would be good with maybe lentils also.
