I was wondering if anyone uses/has used textured veggie protein? Recipe for Jamaican Jerk TVP

I have several recipes where I use it. One simple thing I do, with the

lighter-colored chunk size tvp, I to soak about a cup in boiling water for

about 10 minutes, shred it in a food processor, then smother it in bottle

BBQ sauce to make vegan pulled-unpork sandwiches. I have a recipe for

making TVP sloppy joes, and for using it in lasagna that I could post.

 

 

 

Recently I tried a vegan recipe for Jamaican Jerk Tofu, from Post Punk

Kitchen that I did not like. I later tried the same sauce with TVP chunks

and that was GOOD. Here is the altered recipe:

 

 

 

Jamaican Jerk TVP

 

1 cup chuck style TVP (light un-chicken style or dark un-beef style)

 

For the marinade:

1/2 large white onion, roughly choppped

4 cloves garlic

2 tablespoons fresh ginger, grated

Juice of 2 limes

Zest of 1 lime

2 tbsp soy sauce

2 tbsp olive oil

3 tbsp pure maple syrup

1 tbsp dried thyme

2 tsp allspice

1/2 tsp cayenne

1 tsp nutmeg

1/2 tsp cinnamon

2 jalapeno peppers, seeded and chopped (or one if you don't want it too

spicy)

 

Directions

Puree all marinade ingredients for the marinade in a blender or food

processor.

 

Place TVP in a 2-cup glass measuring cup. Pour boiling water to cover up to

the 2 cup mark. Let sit for about 10 minutes until all of the water is

absorbed. Marinate reconstituted TVP in a covered bowl for an hour -- mix

once halfway through.

 

Heat the tofu in the marinade. Serve over rice.

Calories: 161; Protein: 9g; Fat: 9g; Saturated Fat: 1g; Cholesterol: 0g;

Sodium: 543 mg; Fiber: 1g
