Here's what I made last week (from " The Vegetarian Epicure " by Anna

Thomas) and loved so much I'm making again tomorrow:

 

GARBANZO BEAN SOUP

 

Ingredients:

 

2 cups dried garbanzo beans

1/2 tsp. dried Rosemary

3 Tbs. olive oil

4 cloves garlic, put through a press

1/4 cup chopped onion (about 1/2 a small onion)

1 fresh green chili, diced

1 Tbs vegan Worcestershire sauce (can substitute soy sauce)

1 can tomato paste, 6 oz

fresh ground black pepper, to taste

1 cup shell macaroni (or any kind of short pasta.)

 

Directions:

 

Cook the beans, using your usual method, adding the rosemary to the

water before cooking. Preserve the bean liquid as soup stock.

 

Heat the olive oil and saute the crushed garlic and chopped onion

untilt he onion is transparent. Add the diced green chili,

Worcestershire sauce and tomato paste and mix well. Transfer this

mixture into the soup pot with the beans and liquid. Season with

plenty of fresh ground black pepper.

 

Add water, if needed, to make room for the macaroni. Bring the pot to

a simmer, then add the macaroni and continue to simmer for about 20

minutes more.

 

Serves 6 to 8.
