Guest guest
COOKING DICTIONARY - Jennifer Harway Coriander, Green (Coriandrum, Chinese parsley, Cilantro) The parsley of India and SE Asia. It is ground into fresh chutneys, mixed in with vegetables, featured in soups, cooked with chicken and used as a garnish. In India, just the delicate, fragrant green leaves are used though South Indians generally through it into their dals for extra flavour. Other parts of the region treasure stalks and roots. Roots are used in Thai cooking, and are crushed with garlic and black pepper to make a marinade for meat. The roots and stalks can be frozen successfully, and they make a great addition to stock. Coriander, Seed Small straw-coloured ridged seeds with a faintly orange flavour are sweetly spicy and cheap. They are used widely in Indian cookery, and are often the major part of many spice mixtures. In Western India they are combined with cumin, shredded coconut and other spices to make a " black masala " that is used with meat and vegetables. In Kerala in the South, they are combined with fenugreek seeds, black peppercorns and red chilies, dry roasted and used to flavour dishes of prawns. Guest guest
Dhania powder is just ground corriander (dhania, in Hindi) seeds. The seeds are often toasted before grinding. , Patricia Sant <drpatsant wrote: > > > > Coriander, Green (Coriandrum, Chinese parsley, Cilantro) The parsley > > of India and SE Asia. . . . > > But I understand the recipe called for 'coriander powder' - by which would > be > meant ground coriander seeds???? > > Best, Pat > > > ______________________________\ ____ > Shape in your own image.
