Guest guest Posted September 7, 2007 Report Share Posted September 7, 2007 disclaimer...call for cheese...apologies to list if this offends anyone. i've never made it with soy cheese, but suppose it could happen... 1 lb. thawed frozen chopped spinach 5 eggs (i use 4 and one egg white) 1 large onion, minced (used my tiny cuisinart which minced smaller than i could by hand 10 TBS. margarine (not too sure about that yellow stick stuff, so used unsalted butter...probably not as healthy, but if i'm going to go, it's going to be with a smile on my lips) 1 cup shredded parmesan (romano works also and probably the grated in the jar would be fine) 2 garlic cloves, minced (big ones) 1/2 tsp. thyme (about spices...i'm a big rosemary fan so i used that also and more of each) 1/2 tsp. cayenne 1 3/4 cups italian bread crumbs (i've made it with my own crumbs with with packaged... salt (because of the unsalted butter) pepper (i make virtually nothing without coarse ground pepper. preheat oven to 350 degrees F remove excess moisture from spinach. add remaining ingredients and mix well by hand. form the mixture into balls either by hand or with small ice cream scoop. I use a melon baller (inherited from mom years ago...makes the balls smaller, more 'pop in your mouth' eating. place the balls closely together on a baking sheet. you can almost fit them all on one sheet. cook in the top half of the oven until firm to touch about 20-25 minutes. i sort of shook them a bit about half way through. no didn't move each one individually. that is over and above call. let cool 5 minutes then serve. the recipe had this footnote: wearing latex gloves while mixing and forming the balls is suggested. never done that, sort of loses the magic for me. they are kinda sticky but manageable when balling; i also minced and added two hot chilies for that zing. and i served them cold. since i had a bowl of tamari for the sesame balls, people dipped the spinach balls. leftovers were baggied and thrown into freezer. when i need an appetizer for friends, i take them out and nuke them for a minute or two. This list is vegetarian which means some are vegan, some eat eggs, some eat dairy, etc. No apologies necessary. I have experience with converting recipes that have dairy/egg to vegan, so I am always looking for all kinds of vegetarian recipes because some of them I can convert to vegan (and it's fun to experiment with the conversions!) Sometimes I have recipes that are vegan and can be LO vegetarian (lacto-ovo vegetarian) and I note the LO changes as variations at the end. thanks for the recipe!
