Recipe: Raw Apple Sauce

After a few years of toying with the idea, I finally bought my first

living foods (un)cookbook ( " The Raw Truth: The Art of Preparing Living

Foods " by Jeremy A. Safron.) I picked it because it seemed the least

complicated book and I wanted to start off easy and work my way into

things gradually.

 

Today I made Apple Sauce. It's just the right combination of tart and

sweet. It certainly doesn't look like the stuff in jars (it's brown)

but it tastes better (in my opinion.)

 

Applesauce

 

Serves 2 to 4 (I found it to be a perfect bowl for myself, but I could

see it serving 4 if it were a little dessert after dinner, maybe along

with a torte or something.)

 

Ingredients

 

1/4 cup raisins

3/4 cup filtered water

juice of 1/2 lemon

2 large, crisp apples, peeled and diced (I used Galas)

Ground cinnamon, for garnish

Ground nutmeg, for garnish

 

Directions:

 

Place the raisins in a small bowl, cover with the water, and soak for 1 hour.

In a blender, combine the raisins, their soaking water, and the lemon

juice and blend until smooth.

Add the apples and blend until smooth.

Sprinkle each serving with cinnamon and nutmeg.

Sweets, Puddings, Desserts (I think that covers it!)

Oh, it is! For instance, it never even occured to me to sprout quinoa

before! They look so cute with their teeny tiny little tails! And the

easiest thing I've ever sprouted: I soaked them for six hours and then

I put a coffee filter in a funnel and poured them into it. I let them

sit in their coffee filter for eight hours, running water through them

one more time half way through, and then they were ready. Amazing.

Definitely! I don't have a dehydrator (yet) so everything I'm going to

be trying early on should be pretty accessible to anyone. There are

some salad dressings I'm eager to try because I'm always carting my

own dressing to restaurants to make sure I have something I can eat

but I'm not thrilled with any of the dressings I know how to make so

far and some of these raw ones look stunning!
