(Dunno myself, cuz I don't do much with salad except a sprinkle of rice vinegar or lemon juice usually, but looking at this again makes me want to branch out, expand my horizons, try something new and different - ya get the idea! PAPAYA SEED VINAIGRETTE (Raw) Seeing that pretty picture of papaya seeds reminded me of this recipe... Papaya seeds make calcium more bio-available to the body, and make nutrients more readily absorbed by the cells in the body. They are also high in the enzyme papain which is wonderful for the body and for digestion. If you eat papayas you should make this dressing with the seeds, and not throw them out. 1 1/2 cups red wine vinegar 1 1/2 cups water 1/3 cup fresh papaya seeds one small onion 2 cloves garlic 1 tbsp of sweet basil 1 tbsp of oregano 1/8 tsp stevia extract 1 tsp guar gum ( powdered) thickener Place all the ingredients in a blender and blend until it is creamy smooth. Now papaya seeds have a peppery taste so if you do not like so much pepper use less than the 1/3 cup. Instead of the 1 1/2 cup of red wine vinegar and water, you can substitute 1 cup of lemon juice and one cup of water. I like this better, but some people like the red wine vinegar better. From Mark.
