I have a large qauantity of Jerusalem artichokes, also known as

something like tompinambour. I have roasted,chipped and made soup with

them. Does anyone have any other good ideas?

Not really - you seem to have covered all bases. I use them sometimes with other

root

veggies in a root veggie stew, just cubed. Lovely texture.

 

Topinambur (Helianthus tuberosus)? They're also called sunchokes. I also found a

reference to using them (instead of potatoes) in latkes. And this is a baked

dish in which

you might be interested (WARNING: not vegetarian. Vegetarians should substitute

vegetable stock for ch*cken stock, and vegans could get inventive with soft

tofu, thinned,

They're in our shops bigtime right now and we haven't tried them in ages. Why
