Any way I'm fine now amd tending a new little Orchard of apple, peach and Plum trees that I will be grafting onto later. During the winter months I love Veggie soups of all kinds and I make a kind of sweet,sour, salty and hot red pepper Rice Noodles with stir fried red, yellow and green sweet peppers with Ginger and Pineapple chunks My doctor says that i can do with out the salt, but for me the extra bit of salt makes the dish I like all kinds of none meat dishes and enjoy a spicy tofu and noodle soup also But that is just a small amout of what I eat, encluding lots of raw veggies. It's cold here, too, so I've made a VERY easy soup to keep me warm. Goes great with lightly toasted Ezekial 4:9. I just add the canned veggies of my choice, usually corn and green beans to a quart of any vegetable or tomato juice, I like spicy V8. Heat to boiling and add a chopped potato and diced carrot and/or any other appropriate veggies. Boil for 10 minutes and then simmer uncovered for an additional 45 minutes. But it does get cold in the evenings. I've been here 2 months now (not counting previous visits) and quite enjoying life, especially the search for all the ingredients that we used to be able to find easily. I've been told by the lady in a nearby natural foods store that the only way to buy tempeh in Portugal is in jars, so I duly bought one and it is sitting here looking at me, for all the world like a laboratory specimen... Don't think I'm brave enough to open the jar today so it'll be another leftover day, with gado gado (Indonesian dish of vegetables with peanut sauce) and rice or possibly potatoes for a change! But I do enjoy reading and hearing from you all. Im not a vegetarian, but I love my veggies and love to find new ideas and recipes For them. Believe it or not, ive never had any squash except zuccinni and yellow squash. Last week I tried some butternut squash.. Omg I love it I bought two more yesterday Im dying to try.. Golden Nugget Squash and Sweet Dumpling Squash. What I love to eat on cold cold days is soups and sandwiches. I love to make my own veggie soups. ( trust me Im more of a vegetarian than a meat eater lol) With watching my cholesterol tho my meats are limited. I think it got into the low 30's last night here but I don't really see any frost on the ground. Now I have to spend an hour or so taking potted plants back out into the yard though. Cold weather favorite? Um, some type of soup. Varies depending upon my mood. First thought is tomato but hot and sour sounds good too. I had miso, noodles and a few tofu cubes last night and a salad. I checked the box to make sure there was no meat in the mix. Late lunch, early dinner today will probably consist of French Toast and Boca links or patties. Not a very exciting day today. Not munching on anything right now although I did have some coffee and may have a small bowl of cereal with some Silk and a banana. My favorite cold weather food is spicy chili. My food needs are simple so no big planning on my part. I just throw whatever on hand veggies in the slow cooker with TVP and go about my business for the day. Breakfast is always oatmeal. Here for vet school to better my ability to save as many animals as possible; it is worth being lonely for a few years. The cold weather hasn't really set in yet either here or at home in the Netherlands. As I'm on holiday I am being a bit lazy about cooking. The friend I am staying with is away for the weekend so for dinner tonight I just heated up a frozen Greek spinach pastry which I had with salad. I have been taking a sandwich (often either a vegetarian pate or sliced vegetarian 'ham' with salad) with me for lunch each day together with some fruit and a plain boiled potato (cold of course). It would cost an absolute fortune to buy lunch each day and, in addition, it wastes too much perfectly good sightseeing time to sit down to eat in a cafe/restaurant! With a sandwich I can walk and eat at the same time. However, I will confess to having bought a scrumptious vegetable pasty one day for lunch. My favourite winter meals are lovely warming soups (I especially enjoy leek and potato soup) and wonderful, warming vegetable curries. Another real favourite is eggplant lasagne and I also love Bombay potatoes. I would be happy to eat them as a main course on their own but I usually make spicy spinach to go with them. We have snow falling steadily here, which rarely happens, so I'm really enjoying how pretty everything looks! I had a very fun pot luck type party last night, for all my friends in the pet rat fancy. It was a bit under attended due to the weather, so those who did come brought way too much food, and of course left it all behind. Among the leftovers is a veggie and dip plate, a fruit and dip plate, a cheese plate with assorted crackers, parmesan and garlic kettle chips, a veggie pate that tastes heavily of sage, some chocolate cake, and half a huge carrot cake. In the drinks department, I have Peach/Mango juice, Strawberry/Kiwi juice, diet Mountan Dew, and Chocolate Silk. The reason I mention all this is because that is probably going to be lunch, and dinner, and lunch tomorrow... and possibly the next day too - LOL! For cold weather food, my first choice is always going to be some sort of soup with hot homemade baking powder biscuits, the comfort foods of my childhood, or a nice spicey dahl, chile or thai noodles... but right now, just because they are there, I am thinking of hitting into the kettle chips. Last night I cooked up a quick gai choi in garlic sauce, hot & sour tofu hot pot and mixed veg pot stickers before venturing out to UBC for a concert. We had our usual special porridge for brunch today and tonight we're meeting one of the soloists for a Thai feast. We don't really have a favourite cold weather food... as long as it's plentiful and tasty, we're happy! On the menu recently has been black bean chili, cauliflower vindaloo, Szechuan eggplant, Moroccan stew, roasted root vegetables and family style sui choi. Obviously not all at the same meal!!! The chili was reinvented as a spicy black bean soup with the addition of some diced tomatoes and veg stock and the roast vegetables returned, puréed into a wonderful creamy soup. My husband and children are full time meat eaters, I swear the only reason they eat veggies is because that is what I eat. I can not be considered a full time vegetarian either though, I did eat a chunk of ham this morning. My favorite cold weather food is most anything warm. Soups, chilis and casseroles. Lunch today was a late breakfast, we had our Christmas party for the National Guard last night and got in at 4. Morning after breakfast is always heavy foods. Biscuits and gravy, french toast, o.j., coffee, my husband and the other soldiers had bacon and eggs, sausage. There was alot of food. There is a family B-day party this afternoon so late lunch dessert will be cake and ice cream. Dinner will probably be left over ham sandwiches and potatoes. Sometimes cold weather makes me want hot/spicy soup! Or vegetable curry. Dumplings. Potatoes. Fried rice. Ok I am getting hungry! I am going to the grocery store today, but dinner is a simple stir fry with tofu, mixed veggies over cous cous and a spicy slightly sweet sauce.
