this sounds complicated but wonderful.

 

I had a happy sort of accident once.

 

I usually dump a bag of frozen mixed veggies in a skillet with 1/4

in. of water and let it " stir-steam " (and then do all kinds of

wonderful things with it, including just sprinkling salt and pepper

and eating it). Well, that requires a certain amount of tending and I

didn't have any time to do that. So I turned on the oven, dumped the

frozen veggies into a baking dish and set the timer for about 20

minutes--then went back to work at whatever I was doing that was more

important than cooking dinner. Yum! they were *so* much better than

steamed.

I will have to try that sometime. I bet it was good, and it couldn't have been

more easy.

2 potatoes, peeled and cubed

 

4 carrots, sliced

 

1 head fresh broccoli, cut into florets

 

4 zucchinis, sliced

 

salt to taste

 

1 tablespoon olive oil

 

1 (1 ounce) package dry onion soup mix

 

can also use cauliflower and mushrooms

1.Preheat oven to 400 degrees F (205 degrees C). Lightly grease a

large baking dish.

 

 

 

2.Combine vegetables in prepared baking dish, and lightly salt.

Brush with olive oil until well coated. Sprinkle with dry soup mix.

 

 

 

3.Bake for 30 to 45 minutes, or until vegetables are tender.
