a no meat loaf

 

makes a firmer loaf, let it cool & set after baking

 

INGREDIENTS:

 

.. 1 (12 ounce) package morning star farms vegetarian burger crumbles

or 2 cellophane pouches of boca ground

.. 1 (1 ounce) packet onion dry soup mix

[i used knorr spring vegetable soup]* [or use a dry [vegetarian] onion soup

with no meat

base in it]

 

.. 1/2 cup regular bread crumbs

 

1/2 cup of torn dark bread * [ pumpernickel rye or wheat]

or used unseasoned croutons.

 

a handful of scrubbed fresh chopped mushrooms

 

.. 1 1/2 teaspoons vegetable oil

 

1/2 tsp of chopped roasted garlic *

 

1 chopped onion*

 

1 chopped green pepper*

 

chopped celery*

 

..2 eggs, beaten with 1 tsp of vegetarian Worcestershire sauce

 

a pinch of nutmeg or sage [both if you like]

 

1 tablespoon of dried minced onion

 

.. 1/2 teaspoon garlic powder, or to taste

 

.. salt and pepper to taste

 

DIRECTIONS:

 

1. Preheat the oven to 400 degrees F (200 degrees C). Grease or cooking

spray a 9x5 inch loaf pan.

 

2. In a large bowl, mix together the burger

crumbles, onion soup mix and bread crumbs & torn bread.

saute a chopped onion & green pepper in a little pan

add to mixture

 

then

Stir in oil and eggs, and season

with garlic powder, salt and pepper

other spices.

 

Mix well to blend in seasoning.

Spread into the prepared loaf pan.

 

3. Bake for 30 to 45 minutes

in the preheated oven, or until firm.

 

Serves 8- 10

 

for topping mix tomato sauce or 4/0z of tomato paste mixed with a 1 1/2

water and a pinch of sugar & cinnnamon & black pepper pour over meatloaf -

last

10 minutes of cooking

 

or make a basic brown gravy and add mushrooms, to it, to top the " no meat "

loaf & serve.

Hi all,

As you know from previous posts, my mind is made up to become a

vegetarian and eventually a vegan in the new year. I have been

sampling different products along the way for the last couple months

to get a taste for different things. I realized I dont like vanilla

soy milk for cereal. I heard that unsweetened almond breeze is a good

one, any suggestions? Also, I will admit, I grew up in a southern

family where meat was everywhere, so Im use to the texture etc. I dont

want to feel Im missing out, so does anyone have a good beef

substitute that could be used in stir fries, or " beef " stew? I would

appreciate it. Im going to try the chicken strips from morningstar

this week sometime to see if they are decent tasting. As far as other

things, I have a tofu cutlet, some soy chorizo, in the fridge to try.

And I actually like the tofutti cream cheese. So its a start. Thank

you in advance.

ahhhh, beef analogs. So glad you asked. :)

 

So many of them are condemmed by vegetarians unfortionately.

 

Warms my heart, cuz this is how I switched. There are so many on the market.

You have to try em all and not assume they are all good or bad. Cuz some will

surprise you. For instance, I like the Loma Linda products. They are canned.

But I do NOT like the Loma Linda bigger links, only the smaller ones. And I

ADORE those little swiss steaks in the can from them.

 

Amy's brand is good in frozen. Along with the Morning Star Farms stuff which

I find mixed in what I like and what I don't like. I like their sausages, but

not much more than that with their 'bacon' kinda ok but not satifsying as much.

 

I prefer good ole textured vegetable protien (dry mix) (tvp) to those frozen

ground 'meat' products meant to sub ground beef.

 

What really helped me in the beginning was Tempeth. Wow, what a chewy meat

like texture I made a great chili with. And I also am in " Beef Country " ,

(Texas, lol for sure). I did a lot with tempeth, and my mother did a great

meaty tasty tofu enchillidas. You have to freeze tofu and you get a great chewy

texture that works a lot more easily to adapt to what you used to cook with

meat.

 

Also, American Wholefoods Cuisine by Nikki Goldbeck and David Goldbeck

has some great recipes. They have a nut loaf that tastes JUST LIKE meat,

exactly!! I am NOT kidding. They have several in there if I remember right.

The one I'm talking about is got only meat, cheese and eggs. No spices or

anything but WOW this was good! It's one of the first things I tried. But it

does have a LOT of cheese, so I didn't make it long. I found other nut things

to taste meaty. It's still worth looking thru, it helped me transition like

nothing else!! THEN and only then did I go to the other Vegetarian cookbooks.

 

In this cookbook they also have a 'fried cheese', and it is basically

provolone fried, and then when it gets cool break it up and it has a bacony like

flavor and crisp texture. It helped take some of the craving out for me since

the only meat I missed was bacon and pepperoni.

 

I recently saw some frozen new portabella burgers that were good, but too

expensive to have again. You may try sauting a large portabella section for a

burger itself.

 

Honestly, these for me were just transition foods from meat. I really prefer

fresh in everything, and meat analogs were just compounding that mindset of

meat, so I don't do them much. They are great to still compliment and I do them

still in moderation, with lots of fresh stuff to compliment them.

 

And on going Vegan, here's a great little cookbook that can help cut the

cravings for cheese: The UNCheese Cookbook by Joanne Stepaniak. I ADORE

sauces, and this has plenty and MORE like specific cheese tastes. mmmm good.

 

And no, I'm not completely Vegan.

Hi Terri :) If you are looking to go vegan in the new year, my

experience would be to start making your own replacements for the

texture and desired taste as substitutes(seiten,dishes with tofu). I

have not been able to find very many vegan protein substitutes to

use. I have used vegetarian however. Morning star farms ground

veggie crumbles and ground sausage veggie crumbles work nicely in

recipes especially when you add the spices as in (chili). They do

have a vegan burger that is nice. I personally cannot stand their

strips but somebody else may love them. I am not trying to promote

any product here and I hope it is ok I mentioned one. As for soy

milk, there are so many varieties even in the silk brand alone, you

just have to keep experimenting. Perhaps plain soymilk would suit

your taste better. And different makers have different flavors.

While you keep experimenting, you will find ways and recipes and

things that you really enjoy! I really have fun experimenting with

tofu. The first few times...not so good....but I learned to make it

how we like it. I hope this helps!

Morningstar meal starters steak strips found in the

freezer section of your store. If they don't have

them, they could most likely stock them for you if you

request it. They are very meaty tasting; we've even

successfully fooled some of our meat-eating friends.

They work in soup, curry, or even on their own with

some sides. They are even vegan, unlike many other

Morningstar products, so you can still use them after

the new year. Good luck!
