Guest guest
They were correct! It's called Cha-Ya on Shattuck in Berkeley. YUM! I thought the prices were pretty reasonable considering the quality and tastiness of the food. My favorite roll is the avocado and shitake roll. Heaven! Oh, you also have to try a dessert--vegan vanilla ice cream topped with red bean sauce, green tea sauce and little rice/barely crunchies. Guest guest
Minako's is great. They're owned by a mother and daughter (the mom being one of the very few women sushi chefs trained in Japan). All their stuff is organic (even the sake), which is rare among restaurants in San Francisco. They offer many vegan options -- as many as a vegetarian place would -- but they are not a vegan/vegetarian restaurant. Nonetheless, it's a great place, and both the women are friendly. Judy (the daughter) likes to play hip music in the place. Guest guest
Zahira, Here is a link that lists many sites with instructions for making sushi at home. http://www.google.com/search?sourceid=navclient & ie=UTF-8 & rls=RNWE,RNWE:2005-38,R\ NWE:en & q=how+to+make+sushi Just a few thoughts: If you eliminate the fish or shellfish, and the roe/fish eggs if any, you have vegan sushi. For example: California Maki, is white rice, rice vinegar, sesame seeds, seaweed, avocado, thin slices of cucumber, and pollack. They use Pollack which is a fish substitute for crab. Without the Pollack/crab this sushi is vegan. And other than the small slice of avocado, the only calories and fat are negligible. You could use baked tofu pieces either with carrots and cucumbers ... its good that way. Sushi isn't considered a fattening food. There are 2 sushi rolls that are vegan that the Japanese make: both are made with rice, rice vinegar, sesame seeds and seaweed. One has cucumbers and the other one has carrots. One is called Kappa Maki and I Tekka Maki is the name of the other one. I'm not positive on the second name. Linda Linda J. Guest guest
Thank you for your reply. Guest guest
Zahira, I have seen those sauces, only on some types of sushi, usually the sushi that is made with raw fish. I haven't see any on the California Maki or the two veggie sushi's I told you about. The sauces look like they might have fish eggs in them? I've never asked about the ingredients, I just assumed those little red or orange " things " were eggs. However, if you are at a restaurant you could ask what the sauce/s ingredients are. And of course if you make sushi at home you will be safe. I also discovered that the Japanese use Bonito/fish flakes in a lot of their dishes, especially miso soup. I guess we just have to ask about everything when we go out...it sure is frustrating. I wonder if any of you have noticed that products in the grocery stores that were vegan, are now showing dairy on their labels. Hersey's " Special Dark " chocolate, the only chocolate they carried that had no dairy. I called about 6 months ago, one of my co-workers said he was sure they had dairy in them. Hersey's told me that they just started using dairy in their " Special Dark " formula. The rep said she hadn't even thought about all the lactose intolerant or vegan customers they would lose., nor did she seem that concerned. Archway used to make a vegan ginger snap, and a vegan raspberry/oatmeal cookie....well, no more. There are many products that are now being made with dairy where there wasn't before. It is such a pain shopping, having to re-read familiar labels every time I shop. I would think the food industry would be catering a little more to the growing health and ethically conscious consumer. A friend of mine thinks that with companies constantly being bought out and brands changing hands that the new owners are changing the formulas. However, if you are at a restaurant you could ask what the sauce/s ingredients are. Zahira: I did that recently at a Japanese restaurant (asked about a sauce) and she said 'it's like a barbecue sauce'. I then told her that is thatw as the case then it wasn't a vegetarian sauce as Barbecue sauce has animal product in it. I then asked her straight out if it had animal products in it and her enlightening response was 'I don't know. It comes out of a tube.' Huh??? What kind of waitress doesn't know what she's serving people! And of course if you make sushi at home you will be safe. Zahira: My students and I are going to have a vegetarian sushi night which is why I'm asking all the questions now :-) I've never made Sushi Rolls before and didn't even know about Vegie Sushi until early this year! I live in Tasmania, Australia and have never heard of any of the brands that you've mentioned below. They must be US brands. I too tho have had probs with foods that once were suitable now having chicken stock added or something of the like and when I question it I get remarks like 'it's to give it flavour. If it was just the vegetable, it would be very bland.' I find it very curious that when meat eaters are having vegetable they need them to taste like meat ???? Guest guest
What animal ingredient is in barbeque sauce? I don't really like it, so I've never needed to check the ingredients. And the sauces I've seen on sushi are white or pink. I will ask what their made of the next time I go to a Japanese restaurant and I'll let you know what they tell me. Re: adding animal stock to foods for flavoring. I agree with you....I've heard many times that animal stock has been added to the rice and soups for flavor. I actually prefer veggie stock.....it tastes great and I'd rather not have all that grease. Class? Guest guest
What animal ingredient is in barbeque sauce? I don't really like it, so I've never needed to check the ingredients. Zahira: Actually I should reword that. Not all barbeuce sauces have animal products in them. Of course, it depends on how it's made and my prob at the Japanese restaurant was that the waitress had no idea (didn't even offer to check). It still wouldn't have been any good tho cos I'm allergic to tomatoes. I actually can't remember what the meat product is. It's been a long time since I looked at a BBQ sauce bottle. I just remember reading a label one day and found that it wasn't suitable for my vegetarian diet. It was around the same time that I discovered that Worcestershire sauce has anchovies in it - I was really disappointed on that one. I was thinking earlier that things may have even changed - especially after reading some of the recent posts. Sometimes my meat eating friends will question my eating gravy (I only have it when I prepare it at home) cos they think it's got meat flavouring. You should see their jaws drop when they realise it's actually caramel flavouring. No, I don't teach cooking. I'm one of those people who really don't enjoy cooking - it's just one of those every day necessities that you gotta do! No, I teach Raqs Sharqi and at the end of term the ladies like to have a get together. Zahira > And the sauces I've seen on sushi are white or pink.
