sweet 'tators request. :)

Hi Ruth,

I love them baked, and enjoyed with cinnamon and butter. In a well

seasoned soup or I will mash them with carrots and a little sage or

mash them with russet potatoes. They are also good as oven fries.

My mother gave me some sweet potatoes to cook for my new son-in-law for xmas

dinner. As he is a diabetic, they are better nutritionally and don't break down

to sugar as soon as russets.

 

Thing is, he is not that keen on them, and she didn't ask. I like them 'ok',

but have decided to cook him some things he likes better, lol.

 

So long story, am stuck with some sweet 'tators. I found some nice soup

recipes on the two veggie groups I am on. And there is a nice stuffed sweet

potatoe recipe in a cook book I have.

 

But I will get sick of them if they are candied and sweetened. So just

asking you folks that may like them better than me how you do them other than

baked and candied.

Here are my two favorite ways to use Sweet Potatoes. I peel them and cut them

like large steak fries. I drop them in a zip loc bag with a capful of oil, more

or less depending on how many you are making. Then add a little salt and some

chili powder. Toss well inside the bag and pour onto a baking sheet. Bake

about 30 minutes on 400 - 425 degrees until golden.

 

The other way, is that I pierce a sweet potato and bake in the microwave. Then

when it cools just enought to handle. I eat it like an apple. It is so good

and has nothing added.

 

Sweet potatoes are super high in nutrition.

I'm one of those folks that don't care for " sweet " sweet potatoes. My favorite

way to prepare them is to bake them, split them and then scoop out the pulp

leaving the skins intact. Mix the pulp with a garlic clove, pressed, some

chopped green onions, a little sour cream, salt pepper and chipotle or chili

powder. place a half slice of your favorite cheese in the shells, top with the

pulp mixture and some more cheese. Bake until cheese melts and pulp is heated

through.

Hi Ruth

 

I like to cut them into " fries " toss them lightly in olive oil,

sprinkle with a little garlic powder and red pepper flakes to taste.

Cook them on a sprayed cookie sheet (or they will stick) and leave room

between them so they cook nicely. You may want to use more than one

cookie sheet for this. Cook at 400 for about 20 minutes and then 425

for 20 more or so, being careful to keep an eye on them so they do not

burn (they like to try to!) I sometimes sprinkle sea salt on when they

come out. Sometimes not. Yum!

Hi Ruth,

 

My favourite is to first cut the sweet potatoes into wedges, then:

a) lightly spray with olive oil, dust with just enough cayenne and salt, bake

until tender and serve with lime wedges to squeeze over, or

b) lightly coat with sesame oil, sprinkle with sesame seeds and a touch of sea

salt, bake until tender and serve with an Asian dipping sauce (something with

citrus, ginger and chili).

 

I find the combination of hot, salty and sour brings out the flavour but subdues

the sweetness of sweet potatoes.

I haven't read everyone elses replies so I don't know if this has come across.

 

I love potatoes. All kinds of them, white, red, sweet, yams. I cut them into

chunks all kinds mixed together with squash, brocolli, maya onions, garlic and a

couple of brussel sprouts (for my husband). I sprinkle them with spices. We have

a nice rosemary garlic blend that we like. I add some cubed margarine and roast

them in the oven until they are done, or in my case I remember to take them out.

I really like them this way.

I hope I have reached everyone individually to thank them. This is AWESOME.

I have actually tried a couple of the recipes already. And found them

delicious. I wanna make the hummus next as I had never thought of the sweet

potatoe at all as hummus possibilities till I had so many.

 

I love how unsweet this spud is and versatile. Again, I never 'thunk' of them

that way.

 

I am sorry about the double posting of the groups. I will put another name on

Well, it's not as healthy because it takes a bit more oil, and it's much less of

a " dinner " item, but sweet potatoes are quite nice when pan-fried in a good oil

like sesame that will handle a higher temp, and then dusted with salt, pepper,

and a little cayenne, or your favorite seasoning blend. They crisp nicely, and

this method does seem to balance the sweetness.

As long as we're talking " not as healthy " . . .

 

I might as well confess that I make sweet potato fries and put them in

the deep fryer. (yes, bad me. I've also been known to deep-fry tofu.

It's not an every-day thing, but I know it's far less healthy.)

 

For tasty sweet potato french fries, peel them, cut them in sticks,

fry them at about 320 degrees F for a couple of minutes (exact time

depends on potato stick size. Pull them out and check one carefully

with a fork.) then turn the fryer up to about 350 degrees, letting the

fries drain while the oil heats. Fry them in the hotter oil until

they're crispy on the outside and a light golden-brown color. Let them

drain on paper towels and then serve. You can lightly dust them with

salt and pepper or you can dust them with cinnamon instead - either

way is good.

LOL, maybe because I'm from the south, too. At least I don't put

pickles in my deep fryer! LOL There are some parts of southern cuisine

that didn't make a lasting impression on me. I drink my iced tea
