Guest guest Posted December 28, 2007 Report Share Posted December 28, 2007 This recipe is " tried and true " and very yummy but not recommended for anyone who just hates olive oil as the finished product will have a very light olive oil flavor to it (which I love, but I understand some people hate.) I've made it with and without the salt. It is still good without salt but tastes much better with it (and I'm not usually a person who notices much enhancement with added salt.) I have not tried this recipe in conjunction with other recipes, for example as a casserole topper or in shepherd's pie. I don't see why they wouldn't work in other recipes, but that aspect of this recipe is not yet " tried and true. " Sparrow Vegan Mashed Potatoes Ingredients: 1 pound potatoes 1.5 teaspoons salt (for boiling water) 1/4 teaspoon salt (for finished potatoes) 5 tablespoons + 1 teaspoon olive oil 1/8 teaspoon black pepper (or to taste) Peel and quarter the potatoes. Put in a pot of water wih 1.5 teaspoons of salt and bring to a boil, then reduce to a high simmer/light boil for 20-25 minutes. Reserve at least 1/2 cup of the cooking water before draining the potatoes. Mash the potatoes with the oil, 1/4 teaspoon salt, pepper, and 1/4 cup of the cooking water. Add a little more of the cooking water if needed for thinner potatoes. Serve immediately. Optional: add your favorite mashed potato spices. These potatoes are awesome with garlic powder mixed in! Note: If you want to double the batch, twice the amount of oil is 2/3 cup. The double of all other measurements should be plain figuring. Here's a major " duh moment " for me. I figured the mashed potatoes by adding oil a spoon at a time, which is how I came up with the wacky amount in the recipe. When I was typing it up to post it, I pulled out my calculator on a whim (aside: I love my calculator!) and converted 32 teaspoons (double the amount above) to cups, got .66667 and put the note about 2/3 cup at the bottom . . . without stopping to think what that meant! Change " 5 tablespoons + 1 teaspoon olive oil " in the recipe to " 1/3 cup olive oil. " Duh. (On the bright side, measuring the oil for potatoes will be much quicker in the future now that I don't have to use all those spoons!)
