Guest guest Posted December 28, 2007 Report Share Posted December 28, 2007 I like making an alternative -chilled carrot punch with (using the juicer) add a bit of almond, rice milk or soy milk, ground nutmeg, cinnamon & allspice to it. (regular carrot punch uses condensed milk) add a tiny drop of lemon juice -- adding the honey optional if your carrots are sweet, you don't need much honey. Mix well. You can make it by the glass or by pitcher full ( if you make a pitcher full seal it tight, store in the fridge & use within a day or 2) =========================== a good vegetarian restaurant here, makes " mock tuna salad " using carrot pulp from the owner's juicer (of all things) the ingredients, that I detect in it ? soy mayonnaise, celery, onions, bell peppers, dulse flakes, fresh dill, sea salt & savory, old bay , tamari & other spices seasonings. It's delicious served on toasted grainy bread on l lettuce, or on wheat rolls. You can even use it on canapes. It's a great way not to let the fiber rich pulp go to waste, after juicing!
