(I suppose I should look there before asking LOL). We are staying home tonight - it would take someone much braver than me to venture out into the battle zone which Holland becomes on 31st December with all the fireworks on every street corner. Dinner tonight isn't anything traditional - in fact I made it up as I went along. However, it smells wonderful and tastes pretty good too if the sample spoon I just had is anything to go by. I guess I should give it a name so let's call it " New Year potato casserole " . 2 large onions about 1 T olive oil (I used spiced wok oil) approx 500-600 grams (approx 1 lb) potatoes (peeled and cut into large chunks) 1 x 400 g/14 oz tin tomatoes (with juice) 1 T tomato paste 1 x 400 g/14 oz tin kidney beans (the only one I had in stock was a mix of kidney beans and corn kernels) approx 150 g (6 oz) button mushrooms (halved) approx 1 T tomato ketchup (to add a little sugar to 'cut' the acidity of the tomatoes) red chilli flakes to taste (I used about 1/2 a teaspoon) salt to taste (I actually didn't use salt in the cooking process because I am not meant to have too much but I think most people would find the dish too bland without any salt) Cut the onions into wedge shaped pieces and sweat in the oil until transparent (about 10 minutes) then add the potatoes and stir to coat potatoes with oil. After about another 5 minutes, add all the other ingredients except the mushrooms then add sufficient water to just cover everything. Heat on medium heat until everything is warmed through then lower heat, cover and simmer for approximately 60-70 minutes to allow the flavours to develop. Remove the lid, add the mushrooms and stir through. Simmer, uncovered, until the sauce thickens. There you go. Probably more than you needed to know but that's what is on the menu " Chez Rieuwers " tonight. Happy New Year to everyone.
