Guest guest Posted January 5, 2008 Report Share Posted January 5, 2008 I found a good recipe to use my left over carrot pulp from my juicer. I made a double batch this morning and made 2 loafs. You can change the egg with a subsitute to make it vegen. I added a hand full of rasins and walnuts then I used slenda in place of the sugar. 1 egg 3/4 cup orange juice 1/2 cup melted margarine (I use Smart Omega for low cal) 1/2 cup sugar 1 cup white flour 1 cup whole wheat flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon (more or less to taste) 2 cups shredded carrots combine wets with wets/ dry with dry first then combine all together. Bake for 17 min or so at 400 degrees F. It was a great find, very yummy and full at wholesome ingred. If you sub for splenda you cut down calories.
