You're right, cinnamon does go great with tomatoes. I never thought of

using it when I make lasagna, but I will give it a try next time. Maybe in a

grilled eggplant, zucchini and mushroom lasagna.

If I can intrude a word into this chat: a

cyberfriend of mine (my co-host on my Care2 vegan

group) swears that a little touch of cinnamon

makes all the difference, especially (she says)

if you use it with canned tomatoes. She says it

makes them taste like fresh. What do you think?
