Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 From Gillian McKeith's " Slim For Life " : ~Raw Pate~ Serves 2 2 TBS torn fresh basil 1 TBS chopped cilantro 7 oz. whole almonds, soaked 2 1/2 oz. pine nuts 2 TBS lemon juice 1 garlic clove 1. Place all ingredients in a food processor and blend until smooth. 2. Place in a small bowl and refrigerate. 3. Serve with mixed sprouts. NOTES: I don't like cilantro, so I left it out. I soaked the nuts overnight in the fridge. I didn't have 7 oz of almonds, so I used the almonds I had, plus some raw cashews as well,to make a total of 7 oz. This is the first raw nut pate that I've ever made, and I am HOOKED! What I do is put some pate' in the middle of a plate and surround it with 1/2 of a cucumber, chopped, and one tomato, chopped. Then I sprinkle some fresh basil shreds on it. It is sooo good! Pretty, too! I think this would also make a good filling for a romaine wrap.
