Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 ~Spicy Black Beans With Limes and Chilies~ 1 1/2 cups black beans (cooked) 1 small carrot, diced 1 stalk celery, chopped 3 TBS lime juice The zest of one lime 2 TBS vinegar 1/8 tsp cayenne pepper 1/4 cup olive oil 1 TBS fresh mint or 1 tsp dried 2 1/2 cups cooked orzo 1 minced jalapeno pepper 1 large clove of garlic Cook the orzo according to package directions. Drain and cool. Add remaning ingredients. Combine and refrigerate. Chill for at least a couple of hours for the flavors to meld.
