In addition to the eggplant and green peppers, I also used roasted red peppers and portabella mushrooms. Instead of the parmesan, I used a mixture of ricotta and tofu. My hubby didn't even realize I snuck tofu into it, hehe. I didn't mention it until after he said how delicious it was. (-: Thanks Marie!
