Will you be away from home for the 7 weeks? Or just really busy? :-) You can make the casseroles in those foil pans and freeze, then hubby can put them in the oven and they'll be ready to eat with little effort. I also started a group at my school for older students -there are about 30 of us over 50 here and we mostly socialize and support each other - definitely needed group. Enjoy what you are doing! I envy you! We have a very large population of " non-traditional students " at my university, but I still end up being a loner because all the group wants to do are child-focused activities that students bring their children or grandchildren to. There's really nothing social on campus for childless grown-ups - everything else is for the teeny-boppers and I'm even more out of place there. I ended up falling in with professors as my social cadre on campus, pretty much from the start of my undergraduate career. I guess that's part of why I decided to work toward becoming a professor myself: they seem to be my natural peer group. But it would be nice to have gotten some of the " student social involvement " that's so often touted as one of the benefits of university.
