Mushroom Empandas

Made a version that is close to one I had in a restaurant. This is the

best version I have come up with - VERY GOOD.

 

Saute mushrooms in oil (I used a good olive oil)

Add vegan cheese (I used vegan nacho cheese)

 

Spoon the mushrooms and cheese into a tortilla (I used whole wheat)

 

Add chopped up roma tomatoes and chopped up green onions.

 

Fry like a taco - turning tortilla to make taco shape - browning it a

bit. Did not take very long - pan was still hot from the mushroom /

cheese mixture.

 

Restaurant also puts cheese on top (melted) and they add lettuce and

sour cream.

 

I should add these were my favorite at the Mexican restaurant I used to

go to when I still ate regular cheese.
