I picked up a book called the Student's Vegetarian Cookbook, which since student is in the title I assume it's single serving meal recipes. Today while I was out I made a conscious effort to choose vegetarian foods and to try and make a transition little by little. I realized today that after I eat burgers or anything heavier than maybe a bit of fish, I tend to feel bogged down and sluggish. The vegetarian pizza I had at the local pizza place was awesome and I didn't feel sluggish afterwards. I am looking forward to trying new recipes and shopping with a bit more of a challenge that the usual list of chicken, rice, salad, and ground beef. lol. I am really looking forward to seeing how things go for me and to make a dramatic and important lifestyle change. Thanks for all your help! I am glad I found this group. Yuk! That 'usual list' you mention would actually be a challenge for most of us here. Ch*cken and ground be*f are definitely off-putting to vegetarians - whereas lovely vegetables and fruit and grains and legumes make our imaginations sing and our mouths water! Skip the me*t thing as quickly as you can - you'll feel even better, I promise. And good for you for taking this step! Now have a wonderful (rest of the) evening! Some ideas to help shopping in the produce section: " Eat a rainbow " - look at the different colors in the produce sectiona nd try to pick new colors. Have you eaten any purple food lately? (ex. purple cabbage, eggplant) How about red food? (ex. red bell peppers, tomatoes) Try new colors of produce to keep from falling into a rut of always getting the same thing. Try something you've never had before. Look around the produce section and see if there's something you've never eaten. If it's " too new " just make a note of it and then research recipes and cooking methods when you come home, planning to buy some the *next* time you're out. Have you had a tomatillo? A plantain? Radicchio? Collard greens? Your produce section can be an exotic exploration of food if you look at it with fresh eyes. Also, see if there's a store in your area with bulk bins where you can buy a little of a new grain to try. Have you had quinoa? Millet? Cous cous?
