Guest guest Posted January 30, 2008 Report Share Posted January 30, 2008 Hi. I am 45, new to the vegan life since Jan 1st (I know, cliche new years resolution? I don't think so, just a good time to make a change). I have to say, I feel so much better physically, no aching joints anymore (could be the large amounts of aspartame in my diet before). I have been amazed at the whole process actually, but have been fairly clueless! I do read labels and try to steer clear of refined sugars and chemicals. I have enjoyed this bean water discussion - I've wondered what to do with soups since I used to make them with beef or chicken stock. I've been experimenting with making chunky salsas from scratch and salads that have everything in them. I can't believe how expensive it can be to eat this way, but figure its a worthwhile investment. For all the women my age out there, what is a good amount of soy for both protein issues as well as perimenopausal health? I am afraid I don't really measure or keep track of amounts of anything, just try to get a lot of variety. Thanks for this forum! I am learning a lot - makes it easier to be on this healthy path. In addition to the water used to cook beans, a soup base I enjoy is a large can of low-sodium vegetable juice, like V-8 or a different brand of the same item. If you have a Vitamix or other high-powered blender, you can make your own vegetable juice along those lines and use it as a soup base. Also, you can make your own veggie stock by saving your vegetable scraps rather than throwing them away or composting them. Save them in the freezer if you need to until you have enough and then cook the ends of onions, carrots, etc. in lots of water until you have a good stock, strain the veggie matter out of it (and put it in the compost pile if you have one) and use the stock or freeze it until needed later. Well, you can make your own vegetable stock (most veggie cookbooks have a recipe) or you can buy it. Also, although I don't use it myself, there is a fake b**f or chikken stock available, especially in healthfood stores. But the bean stock or other stock from cooking vegetables makes a nice addition to that or can be used in place of homemade stock (you might want to add a few herbs). > can't believe how > expensive it can be to eat this way I am always surprised when people say that - although few do. I suppose if you buy out-of-season fruits and vegetables that can come rather costly, but there's no need for the most expensive of all. Setting up a vegan kitchen can however tot up to quite a bit of money, since one has to buy so many things new (and toss so many things out).
