I feel great and I really haven't been craving much except for ranch dressing. Does anyone know of a vegan recipe for ranch dressing (if there is such a thing)? I'll give you the ranch dressing recipe I found online and then my vegan dill dressing and you can probably play with the combination of the two and come up with a version that satisfies your craving. Ranch Dressing (has not been tried by me) from cooks.com 1 c. mayonnaise 1/2 c. sour cream 1 tsp. garlic powder 1 tsp. dill weed 1/4 c. milk 1 tbsp. parsley 1 tsp. onion powder Creamy Dill Dressing from the free recipe book " Quick and Deliciously Healthy Recipes " from pcrm.org/health/diabetes 1 12 ounce package of firm silken tofu 2 tablespoons lemon juice 3 tablespoons rice vinegar 1 tablespoon cider vinegar 1 teaspoon garlic granules or garlic powder 1/2 teaspoon dried dill weed 1/4 teaspoon salt (I left the salt out when I made it) Combine all ingredients in a blender or food processor for 1 or 2 minutes, until completely smooth. Congrats - 2 weeks is a great start About the ranch dressing - I have never dressed a ranch - WHOOPS. Start again! I don't make 'cremy' dressings for salads, except for the once or twice a year I make a creme dressing for a waldorf-type salad concoction. BUT - It strikes me that, looking at various Ranch Dressing recipes on line, you could sub vegan products for the dairy ones. For the mayonnaise, use vegan mayonnaise, and for the buttermilk add a little cider vinegar (around 1 Tbsp per cup) to soymilk and let it stand for a while. To that you add all the lovely herbs and spices that go in your particular preference for this kind of dressing. OTOH, there are usually all kinds of preservatives in that jar of soy mayonnaise - plus salts and sugars and fats that you may not want (I don't have a jar available right now to check). It depends on the brand. Sooooo, if you prefer to use purer ingredients, try adding lemon juice to silken tofu - that's what I do if I need 'sour creme' for example. Play around with it for a bit. You'll be surprised what you can do with a little ingenuity There might also be a vegan product that calls itself Ranch Dressing on the market - but that would spoil all the fun, wouldn't it! LOL, I've really been getting into sauces lately. Julie picked a good time to ask! Last month I wouldn't have had an answer for her. Speaking of sauces, I have a new white sauce recipe. This one has no added fat! I got it from a recipe for mashed millet with gravy. I didn't care for the mashed millet, but I was ga-ga for the gravy which is basically a savory white sauce. I could eat it for days! And unlike my last white sauce recipe, this one doesn't use margarine or any other added fat! (But was still creamy and very tasty. Like magic! :-) The sodium is high, but I don't see why it couldn't be made with a low sodium veggie stock instead of the water and the bouillon cubes (I just didn't happen to make it that way so I can't call that version tried-and-true yet.) Sparrow Low-fat Vegan White Gravy Ingredients 1 medium onion, sliced thin 1 tablespoon minced garlic (about three cloves) 2 vegetarian bouillon cubes 1/4 cup flour 1/4 cup nutritional yeast 1.5 - 2 cups water black pepper, to taste Directions Saute the onions, garlic and bouillon cubes in a little of the water until soft. Add the rest of the ingredients, alternating small amounts of flour and water to avoid lumps. Stir constantly (this is what the recipe said.
