RECIPE: Colorful Corn Salsa

I got this recipe from the PCRM online cookbook and have made it

several times now. It's great as a topper for grains and/or beans and

last night I used a couple of servings of it as a salad dressing and

it was wonderful! It really adds a nice *zing* to any dish and makes a

beautiful, colorful (and healthy!) garnish to food.

 

Colorful Corn Salsa

makes 18 servings (1/4 cup each)

(I think it really makes 6 servings. :-)

 

Ingredients

 

1 cup fresh or frozen corn kernels

2 medium tomatoes, chopped

1/4 cup chopped red onion (about 1/2 medium red onion)

1/2 cup chopped green bell pepper (about 1/2 medium pepper)

1/2 cup chopped orange bell pepper (about 1/2 medium pepper)

10 fresh basil leaves, chopped

juice of 1 lime

3 tablespoons rice or cider vinegar (I use rice vinegar)

 

Directions

 

If using fresh corn, blanch it in boiling water for 3 minutes and

rinse in cold water. If using frozen corn that isn't thawed

completely, either blanch in boiling water for 2 minutes and drain or

microwave until thawed. In a large bowl, combine all ingredients and

set aside for 15 to 20 minutes to allow the flavors to develop. Serve

at room temperature.

 

Per 1/4 cup serving:

13 calories

0.1 g fat

0 g saturated fat

7.5% calories from fat

0 mg cholesterol

0.4 g protein

3 g carbohydrate

1.1 g sugar

0.5 g fiber

1 mg sodium

4 mg calcium

0.1 mg iron

13.6 mg vitamin C

88 mcg beta-carotene

0.1 mg vitamin E

Thanks, Sparrow. Looks as if it would be very

pretty! I'm never quite sure how people use salsa

- it's not in my culinary culture - but I can see

that it would be nice on plain beans to give them

flavour. But as salad dressing????? Okay,

thinking outside the box!!!

It *is* very pretty :-)

 

I grew up with the idea of " salsa " being simply a spicy, chunky tomato

sauce that you dip chips into, but it turns out that there are all

kinds of different salsa recipes (I'm planning to try an apple salsa

soon!) -- technically, guacamole is a type of salsa. Salsa is just a

chunky sauce made from fruits or vegetables and can be served over all

sorts of food - veggie burgers, veggie dogs, veggie " not-meat loaf " ,

baked potatoes and baked sweet potatoes, pasta, grains, beans . . .

and, as it turns out, salad! :-)

It would make a good addition to a vegetarian taco salad with a few kidney beans

added.
