My husband is unhappy at the prospect, but happy that I am concentrating fully on my health. For this reason, it's important that what I cook pleases someone who isn't crazy about the Veg. lifestyle. To that end, I have found a soup recipe that my husband exclaimed, " I will eat this every day! " So, I thought I'd share. Ingredients: 20 oz. Veg. Broth (I use Organics) Firm or Extra Firm Tofu (I use about 1/5 of the brick) Chopped Onion to taste (I use about 4 T) Chopped Garlic to taste (I use about 3 T) Chopped Celery Chopped Carrots Nori Seaweed Chili Paste 2T of olive oil or garlic infused olive oil Heat the broth while sauteeing onions, garlic, and tofu. Add celery, carrots, seaweed, and chili paste to the broth. Add sauteed mix to the broth. I prefer not to let the carrots and celery heat in the broth too long, because I enjoy them crispy, so I remove from the heat and enjoy the whole pot by myself.
