Anyone eaten blue potatoes? - and celeriac

Blue potatoes are lovely. I don't use potatoes a lot in my cooking so I don't

have any kind

often, but I usually use them in a three- or five-bean salad, with all the usual

other

vegetables to help them out. They'd make a pretty dramatic potato salad too.

Best way to

keep that lovely colour, though, is NOT to boil them but to steam them or bake

them

before using. I scrub them rather than peel them too. You're in for a treat! :)

 

Btw, thanks too for the celeriac recipe - I'm fond of this root (which comes

from a form of

'celery' similar to but not the same as the kind we eat in salads and as

crudites, in case

anyone isn't familiar with it). It has a lovely celery-like flavour, but a

little different and

also milder. Great in stews (yes, including chili I imagine, although I haven't

used it that

way for some reason or other!). I haven't tried it pureed or mashed or squished

in any way

- liking the texture as much as I do - but the recipe should be good - and

usable without

the cheese (subbing nutritional yeast or vegan cheez for those who cannot use

dairy

cheese, of course). I'll put it in the Files now.
