Hello SharonH :)

>since there is another sharon on this list i'll sign my name:

>sharonH. i have so many questions and i suspect that many of them

>have been answered in prior posts so pardon any redundancys :)

Ask away, we're here to help you do the food and to support you in

your choice to eat more vegetarian meals. <smile>

>now, i do like tofu, temphe (pardon my spelling!!) tvp, and the

>sort but i know that too much soy isn't good. (my morning protein

>shake is soy)

Could you perhaps buy another protein powder that is not from soy

(whey, rice protein, pea protein, hemp protein...) and have that in

your breakfast shake on days when you have soy/tofu/tempeh for lunch

or dinner? That way you wouldn't have more than one serving of soy

per day.

Would that work for you?

> i guess i'm asking for protein choices. i like eggs and

>dairy...too much of either doesn't work for me. i have a mild egg

>allergy and get a stomach ache if i eat more than one or two.

> cheese is great but it doesn't hold me till my next meal. i also

>have a nut allergy and can't eat nuts or nut butters :(

Oh, I hear you, Sharon. If I have eggs more than twice a week, I get

really bad stomach aches. The same with dairy (except home made

yoghurt, cottage cheese and goat cheese). Also, I can't have soy at

all anymore, it seems I developed a severe intolerance to it over

time. I am also allergic to gluten (wheat, rye, oats, barley).

But thank god, I can eat most nuts with no problems.

> what does everyone eat for their protein choices? i need about 26

>grams of protein for each meal.

I need 26 grams too. :)

So let's see how we can help you. How about this:

-- on days when you have soy shake for breakfast, maybe for lunch and

dinner you could have something with lentils, chick peas or beans:

pureed beans with lentil loaf and salad or lentil & mushroom lasagna

with cheese sauce (a recipe I developed after soy became a problem, I

can post it if you're interested) and a green salad or lentil soup,

rice, veggie-burgers and a salad... (You can tell I like lentils,

can't you? :))

-- on days when you have non-soy shake for breakfast, you can have

tofu or tvp for either lunch or dinner.

-- I sprinkle sunflower seeds or pumpkin seeds over many dishes (stir

fried veggies, curry, soups...). Also, sunflower seed butter is yummy.

-- how about wheat gluten (seitan)? It is almost pure protein and I

hear it tastes really good when marinated and grilled. Maybe others

can help you with that, I have never had it.

It helps me if I make a menu for at least 3 days in advance, or for

the whole week if possible, because that way I know exactly how much

cheese or how many eggs I have to work/cook with (with me it is no

more than 4-5 eggs a week, at least 2 days apart, and cheese every

other day) and then it is so much easier to plan my meals.

Would something like that maybe work for you?

Try different things, see what works for you. You're on step 7 so you

are in a good place to work with your body in a gentle way.

HTH.

Mika,

Can you talk a little more about lentils? I have tried them once and didn't

like them, but I know that they are a very good source of protein. I would

like to be able to enjoy them. Any suggestions? Thanks! Connie

Hey Connie :)

I wasn't too big a fan of lentils, but since I had to stop eating soy

I've grown quite fond of them.

I will upload some more recipes tomorrow. Hope you'll find something you like.

Maybe others have some ideas too? I'd love to hear them.

Connie,

I did not care for them at first as well. I like to add dried chili's to them

which my family

really likes. They are also good fried with mustard seed. You might want to

go to an Indian

Restaurant and see how they prepare them.

Hi Mika, hi all!

With my chronic time shortage I resorted to brown lentils in tins.

For todays lunch I mixed them with brown rice and a bit of goats

cheese and plenty of parsley and a few cocktail tomatoes. It tasted

nice. I use them for all sorts of stews and soups and salads.

I'm not very familar with red and green lentils. The red ones usually

are very mushy and pale, more like mashed potoatos.

I look forward to try your recipes on the weekend.

Hey Sabine :)

That actually sounds yummy! And you thought you were not creative. :)

Light those candles, here I come!

Hugs,

Mika

PS - I like red mushy ones, they kinda blend in into whatever you add

them to (especially good for soups). I use brown ones for loaves and

burgers and stews and such stuff. Red, brown and green are good

together in chilies and curries.

Hi Everyone,

I had a wonderful red lentil soup today from Whole Foods. I don't know exactly how they made it but it was

wonderful, in case you guys have a Whole Foods near you. It seemed to have a tomato base with onions

lentils, parsley.

I'm from Oklahoma so if there are any more Okies out there send a note

my way. I have 2 cats and a dog. I read, I work, I try to scrapbook.

My husband and I are transitioning into the vegetarian/vegan lifestyle

so we have not been at this long. I'm hoping to find some great

recipes here that will make it easier. :)
