Guest guest Posted November 2, 2004 Report Share Posted November 2, 2004 I've been making and canning apple butter for two years now (not counting what'll happen nin a few weeks). I buy'em in bulk at a nearby farm. You can just chunk apples, add raisins and/or " candied " ginger (chopped fine), and use brown sugar, a little lemon juice. Often I'll do this before going to bed and cook it for 8-9 hours.... stirring in the morning. I find it's not necessary to peel the apples (the skins help make the preparation a bit thicker). If I really want it " saucey " I'll cook for 15 to 20 hours (if memory serves) and stir a lot towards the end. Works well. Also, adding some soy margarine works, and if you want to make it a brown betty for a potluck, sometimes rolled oats or bread cubes. It's a forgiving approach and there's plenty of room for " error " so the measurements don't have to be precise. sometimes I'll use half apples and half pears. I'll probably post some of the recipes I've got later this month. For the most part, I just fill up the crock with apples! Guest guest Posted March 12, 2008 Report Share Posted March 12, 2008 This can be made in a slow cooker/Crock Pot or oven at 325 degrees for 3-4 hours. 4 qts. unsweetened applesauce 7 C. granulated sugar 1-1/3 C. brown sugar 5-1/3 T. cider vinegar 5-1/3 T. lemon juice 2 teaspoon. cinnamon 2 teaspoon. allspice 1 teaspoon. ground cloves Combine all ingredients in a slow cooker/Crock Pot or roasting pan. Cover and cook 3 hours, stirring occasionally. Remove lid and continue cooking until excess liquid cooks away (turn to low as necessary) Slow Cooker 5-8 hours, oven 3-5 hours Seal mixture in hot jars and process in a hot water bath for 10 minutes. You seem to have two different directions about cooking time going in the same recipe here (see below). Could you clarify please before I file it in our Recipes????? Okay, I can accept that timing may vary, but I think it'd help a bit to know how much time someone needs to have in hand in order to complete this recipe *shrug* Could be just me. If you understand, then maybe explain what you understand???? I'm not trying to be difficult - honestly - but people will come back and ask us moderators what on earth a direction means, expecially if and when the recipe fails That's why we ask first.
