Guest guest Posted March 17, 2008 Report Share Posted March 17, 2008 Hi Everyone, My name is Stephanie and I'm new not only to the group but to a vegetarian lifestyle. This is all new to me. I was a die hard carnivore. I grew up on a farm in Kansas City. We raised our own beef, chicken and pigs. My husband ( who is refusing to give meat at this point) and I are diabetics. My sugars are out of control and I'm about 100 lbs overweight. I am going vegetarian to help control my diabetes and to lose this extra weight. I have 7 children and I need to be here around for them. As I mentioned before, this is really new to me. So far I haven't missed meat but its only been a very weeks. I am not a vegan so I do used dairy, eggs, etc. I also LOVE fish so I'll be having fish a couple of times a week. This is probably not going to be an easy transition since my husband thinks I've lost my mind or that this is " just another phase " . I'm hoping that as he sees me lose weight and become healthier he might follow along at some time. He is extremely overweight also. He needs to lose at least 150 lbs. Finally, with 7 children (my 5 year old is extremely picky) I need " kid-friendly " recipes. If I can't get them completely off meat at least I can incorporate alot more vegetables into their diet. My daughter is trying to become strictly vegetarian for her health (she's 23, she and her husband and I share a house), and I certainly need to do something, so we are working on it! Your husband sounds like hers, but there's always hope. I have gotten some great ideas and recipes here. Welcome, and good luck with your new lifestyle. I ate the cabbage and potatoes but I tell you that corned beef was hard to pass up. But I did it! My hubby was testing me I know it! Have a great day! That's really great, and I'm sure that you will feel better physically too With luck your husband should catch on to how delicious vegetarian eating can be! Sorry to hear about your diabetes. I'm not a diabetic (nor am I a health-care professional), but many people swear by Dr Neal Barnard's book on reversing diabetes (called, wait for it, _Dr Neal Barnard's Program for Reversing Diabetes_). You might find it interesting. Your local library probably has a copy - mine has. OK, nuff said - you're doing what you can right now, right? That's excellent. And losing the weight will help a lot, as you know. As for kid-friendly recipes, you should find a number of good ones here, but remember this is called 'Vegetarian SPICE' which refers to 'hot' and spicy - ie. ginger, chilies, etc. Most of the file folders have two separate folders inside - one for hot and spicy and the other for recipes with little or no hot spices. Of course, some kids just _love_ hot and spicy food. And, again 'of course' (lol) you can always cut down on the spices for them. Btw, since you are new to all this you may not know that fish is not eaten by vegetarians. (I know, I know, try telling that to people who make up the menus in restaurants!)
