Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 Spicy Sun-Dried Tomato and Walnut Pesto 1 large clove garlic—roughly chopped 1 cup fresh basil leaves 1/3 cup grated Parmesan cheese 1/3 cup walnuts 2 tablespoons water 6 sun-dried tomatoes—roughly chopped 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 cup extra virgin olive oil 1/2 teaspoon crushed chile pepper flakes PLACE all the ingredients, except the olive oil, in a food processor. WHILE you process, slowly pour the olive oil into the mix until all the ingredients turn into a smooth paste (you may have to scrape the sides occasionally). This looks delish and of course anyone could see that a vegan parmezan (for those who don't do dairy) could easily be substituted! I'll file it with both main italian-style dishes and also with snacks (or whatever that folder is called - I can never remember!). Hope you enjoy the group!
