Driving the kids to school and picking them up. I wont be watching them today, since my brother in laws home all day so I can now catch up with my house cleaning lol. We're still having a pretty cool spring here in Ontario, and rain has suddenly decided to return Sounds like a good afternoon for staying home and messing around in the kitchen! We're gearing up for a long weekend (Victoria Day) this weekend - and this is of course when a lot of Canadians travel. We'll be staying put, but perhaps some Canadians on the group have plans? Or maybe you'll be the travel destination for others, either friends or family or both. What's on your menu for the weekend? And those of you outside Canada (and that, I think, is by far the most of us all), what about your food lplans? Making anything new? Tried a new restaurant? Let us know, okay? Guest guest Posted May 14, 2008 Report Share Posted May 14, 2008 Hmm...this isn't a spicy recipe, but tonight I'm making a vegan version of a Kentucky hot brown. For those who don't know what that is, it's an open-faced turkey and bacon sandwich topped with tomatoes and cheese sauce. I'm going to get some really good bread or English muffins, top it with several slices of Tofurkey, throw on some tomatoes (I may cheat and used diced canned), smother with cheez sauce (made from nutritional yeast), and finish off with soy bacon bits. I work out 3 times a week at a Physical Therapy clinic - on their wellness-Maintainence program for former patients. I 'commandered' the TV remote and tuned it to a cooking show on PBS. That got some attention from the staff and other clients and we had a good discussion about rice and mushrooms and vegetarian dishes. Making others aware. It seems like all to often they only show Veggie sides. I think that it would be awesome if we could get a food network Challenge for Best Vegetarian dishes. Sarah B. I am slowly clawing my way to the surface again. I made a nice crustless quiche for dinner on Thursday. A friend posted the recipe to another one of my groups. It looks as if she may have found it on Internet but she didn't indicate where she found it so I can't acknowledge the original source. Apart from leaving out the bacon (I wonder why!!) and reducing the quantity so a more manageable level for two people, the only other changes I made were to use less cheese and to add some smoked paprika powder instead of using salt. As I didn't have any Tabasco I used hot sambal - I guess the result was probably a little spicier than it would have been had I used Tabasco. It was rather delicious and quite economical to make as the bread bulked out the other, more expensive ingredients. Makes 6 servings ACTIVE TIME: 35 minutes TOTAL TIME: 1 1/4 hours EASE OF PREPARATION: Easy 2 tablespoons plain dry breadcrumbs 4 large eggs 1 1/4 cups 1% milk 1/2 teaspoon hot sauce, such as Tabasco 1/4 teaspoon salt, or to taste Freshly ground pepper to taste 2 cups cubed whole-wheat country bread (about 2 slices, crusts removed) 3 cups broccoli florets 2 teaspoons extra-virgin olive oil 4 slices Canadian bacon, diced (about 2 1/2 ounces) 1 medium onion, chopped 1 cup grated Monterey Jack or part-skim mozzarella cheese (4 ounces) 1. Preheat oven to 350°F. Coat a 9-inch deep-dish pie pan (6-cup capacity) with cooking spray. Add breadcrumbs, tilting to coat bottom and sides. 2. Whisk eggs, milk, hot sauce, salt and pepper in a large bowl. Add bread and stir to coat. Set aside in the refrigerator. 3. Steam broccoli until just tender, 3 to 4 minutes. Refresh under cold water and drain well. Chop coarsely. 4. Heat oil in a medium nonstick skillet over medium-high heat. Add bacon and onion; cook, stirring often, until softened and light golden, 3 to 5 minutes. Add onion mixture and broccoli to the egg mixture; stir in cheese. Pour into the prepared pan, spreading evenly. 5. Bake the pie until light golden and set, 45 to 50 minutes.
