Guest guest Posted May 19, 2008 Report Share Posted May 19, 2008 New member here, jumping right in. I like my sweet potatoes 2 ways. First is mashed up real good with a lot of cinnamon stirred in. Second is raw in a green salad. Vegetables roasted in the oven are super - it really brings out their flavor. My favorites are broccoli, carrots, onions, green peppers, Yukon gold potatoes, and cauliflower. I never thought about cutting sweet potatoes into chunks and roasting them. I assume you peel them, cover a shallow baking sheet with foil, and use non-stick spray? Also, what oven temp. do you usually use? Add the remaining ingredients and process until very smooth. Hints: This is a richer sauce because of the peanut butter, so keep this for special occasions. This may be thinned out with some water for a dressing consistency or used thick as a sauce. To make this even more spicy, add more of the hot chili sauce. To warm this sauce, heat in a double boiler over boiling water. Garlic-Roasted Sweet Potatoes 2 cups cubed peeled sweet potatoes 1 garlic clove, minced 1 Tbsp olive oil 1/8 tsp salt Pinch pepper In a small baking dish, combine the sweet potatoes and garlic, Drizzle with oil; sprinkle with salt and pepper. Bake, uncovered, at 425F for 30 minutes or until tender, stirring every 10 minutes. 2 Servings *************************************** Sweet Potato Cobbler Dessert 2 lbs sweet potatoes, peeled & sliced ¼ inch thick 3 ½ cups water 1 ½ cups sugar 3 Tbsp all-purpose flour ½ tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp salt ¾ cup butter, cubed **see note PASTRY 2 cups all-purpose flour ½ tsp salt 2/3 cup shortening 5 to 6 Tbsp cold water 2 Tbsp butter, melted **see note 4 tsp sugar Whipped cream or Non-dairy whipped topping, optional In a saucepan, cook sweet potatoes in water until crisp- tender, about 10 minutes. Drain, reserving 1 ½ cups cooking liquid. Layer potatoes in a greased 9x13x2-inch baking dish; add reserved liquid. Combine sugar, flour, cinnamon, nutmeg and salt; sprinkle over potatoes. Dot with butter. For pastry, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. On a floured surface, roll pastry into a 9x13-inch rectangle. Place over filling; cut slits in top. Brush with butter; sprinkle with sugar. Bake at 400oF for 30-35 minutes or until top is golden brown. Spoon into dishes; top with whipped cream or non-dairy whipped topping, if desired. 10-12 Servings Notes: This recipe is written as I originally received it, but vegan butter alternatives may be used successfully. Do not omit the butter (or its substitute) as it negatively changes the texture of the dish. **************************************** Slow Cooker Sweet Potato Lentil Stew 4 cups vegetable broth 3 cups sweet potatoes, peeled and cubed (about 1 ¼ lbs) 1 ½ cups dried lentils, rinsed 3 medium carrots, cut into chunks 1 medium onion, chopped 4 garlic cloves, minced ½ tsp ground cumin ¼ tsp ground ginger ¼ tsp cayenne pepper ¼ cup minced fresh cilantro ¼ tsp salt In a 3 quart slow cooker, combine the first nine ingredients. Cover and cook on low for 5-6 hours or until vegetables are tender. Stir in cilantro and salt. 6 Servings Variations: Add your favorite curry powder to this dish to add some heat. I add about 1-2 tsps(to taste) to the long cooking to allow the flavors to develop, and then another ¼ tsp(to taste) at the end (often in place of the salt) to brighten up the curry taste. Enjoy!!
